In this episode we put together a delicious kale salad. We massage the kale leaves with maple syrup and olive oil and then sprinkle the whole thing with pomegranate seeds. The result is a crunchy, tangy, sweet & savory surprise that will delight most everyone at your table, including kids. If you're looking for a way to introduce kale to your family, this is a great recipe to start with.

Ingredients:

  • 1 bunch Lacinato kale
  • 1 pomegranate (variation: dried blueberries)
  • 1 TBSP roasted sunflower seeds
  • 1 tsp real maple syrup
  • 1 lime (variation: lemon)
  • Liberal olive oil
  • Pinch of Sea Salt

Instructions:

  • Wash and dry kale.
  • De-rib the kale and cut into thin ribbons.
  • Drizzle with liquid components (maple syrup, lime juice, olive oil). Maybe a pinch of salt here.
  • Hand massage kale until it turns a vibrant dark green and is tender to the touch.
  • Add pomegranate and sunflower seeds and toss together.
  • Sea salt to taste. It’s really that simple, now enjoy!

Kale - Brassica/Cruciferous Family:

  • Glucosinolates contain sulfur which the liver needs to eliminate toxins.

  • Glucosinolates also help metabolize estrogen. This makes women who consume large amounts of cruciferous veggies possibly less likely to develop estrogen-sensitive breast cancers, uterine cancers, or cervical cancers.

  • For men, there may be some advantages to clearing estrogen as well, because it frees up testosterone to do its job. Yo!
